Green Goddess Salad with Cauliflower

Originally adapted from a recipe on the Lifesum App, this salad is fresh, verdant, crisp, and filling! Full of flavor and packed with off the charts nutrition! Our humble Cabbage and her friend Cauliflower provide the base for this wonderful hearty salad and green onion, shallots, garlic, and lemon dress them for the show!

If you are planning on (or currently on) the Cabbage Soup Diet Reset, this is a perfect entree salad for Day 2 or Day 3.


Ingredients:

  • 1 Small Cabbage finely diced or shredded (About 1kg)

  • 2 Cups finely diced steamed Cauliflower (Can use Cauliflower rice)

  • 1 Cucumber, finely diced (Can be English Cucumber if you choose)

  • 5 Green Onions, sliced (tender green parts and white parts)

  • Avocado

  • Juice of 2 Lemons

  • 1/4 Cup Olive Oil

  • 2 Tbsp Apple Cider Vinegar

  • 2 Cloves of Garlic

  • 1 Shallot

  • 1 Cup Fresh Basil

  • 1 Cup Fresh Spinach

  • 1/3 Cup Nutritional Yeast

  • 1/4 Sunflower Seeds or Pumpkin Seeds (You can leave these out if you need to)

  • 1 Tsp Salt

Instructions:

  1. Add the diced cabbage, cauliflower, cucumber, and green onions to a large salad bowl and lightly toss to combine.

  2. In a blender or food processor, combine the lemon juice, olive oil, vinegar, garlic, shallot, fresh basil, spinach, nutritional yeast, seeds, and salt. (If the dressing is too thick, you can add water until your desired consistency, I like to add a bit of ice to make it lighter and keep everything fresh!)

  3. Pour dressing over the veggies in the salad bowl and toss to coat evenly.

  4. Slice up the avocado and place on top.

  5. Devour and enjoy!!
